Happy Wednesday! I’m so glad this week is already halfway over. I’m looking forward to this weekend (I always am) and the end of the month when I get to move into a new apartment.
Anyway, here’s what you all came for.
What I ate:
I love chia seed pudding lately. I just mix together almond milk, a couple tablespoons of chia seeds, and cinnamon and let it sit in the fridge for a couple hours until the chia seeds puff up, then add toppings. It’s perfect for a mid-morning snack, which is actually what this was. I had a small bowl of oatbran for breakfast.
The asparagus is from the Farmer’s Market. So good!
Some people tell me it’s strange, but I really enjoy fruit in salads. This one has dates, banana, and frozen raspberries, and lettuce, pecans, cinnamon, and balsamic vinegar.
Breakfast is my favorite meal and I strongly believe that it can be eaten at all times of the day. I’m also in love with spelt flour pancakes. I added cinnamon, oatmeal, and raisins to these ones and they tasted kinda like oatmeal raisin cookies. It was awesome.
What was the best thing you ate today?
