Hey babes!
I was in a serious baking mood last night and had to make more granola. Nevermind that I’m pretty much addicted to this stuff and had just almost ran out.
This granola has been my afternoon snack for the past couple weeks. No big deal, I eat the same foods for breakfast, lunch, and dinner all the time. I don’t know how I don’t get sick of eating the same foods every day, but I don’t. I was kind of excited when I woke up and didn’t want oatmeal for breakfast for the first time in forever. I was also a little lost. What was I supposed to do? I didn’t know how to function in the morning without oatmeal for breakfast. Oh, this granola is perfect for breakfast too. Actually, I think it’s perfect all the time.
Maple-Cinnamon Granola
- 3 c. oats
- almonds and pecans
- coconut
- pinch salt
- generous sprinkle of cinnamon
- 1/3 c. applesauce
- 2 T. safflower oil
- ¼ c. maple syrup
- raisins, chocolate chips, whatever you want
Preheat the oven to 350 degrees F. Mix together the dry ingredients first, then stir together the applesauce, oil, and syrup in a separate bowl. Pour this over your dry ingredients and mix thoroughly. Spread on a baking sheet and bake for about 45 minutes, stirring every 15 – 20 minutes. Add your mix-ins and make sure you let it cool completely before putting in a jar (because everyone puts their granola in a pb jar, right?). p.s. If you add the chocolate chips before it cools completely, they melt and make really awesome chocolately clusters like omg so good.
Pretty, right? Just granola didn’t satiate my baking needs. I’m glad it didn’t though because this is really freaking good. I topped it with a scoop of So Delicious coconut milk vanilla ice cream (which is amazing, by the way!). The girl reallyyy liked this one, so I’ll have to recreate and figure out the recipe soon. I never measure things precisely when I bake and I don’t usually take the time to write down the recipe, which just means that I have to make everything at least twice. No big deal.
Ooh, I made an appointment with a dietician today because I haven’t had any energy for the last couple months, especially when I try to run. I’m super excited about it! I hope that this will help me figure out how to eat to make my body feel the best, or at least better than it does now.

Oh dang that granola looks quite spectacular! I love adding coconut to mine as well, it makes it so much better!
